Ancient History and Bernardo Buontalenti

The tradition of cold and frozen desserts dates back thousands of years and across many cultures based in Europe, Asia, and Africa, but gelato begins to take shape in the 1500’s with Bernardo Buontalenti an artist from Florence who brought gelato to the court of Catherine de’ Medici.

Procopio Cutò – Father of Italian Gelato

A man named Procopio refined and heavily influenced the creation of Gelato. From Wikipedia:

Procopio had learned in about 1680 how to make a beverage of ice made of lemonade using salt to lower its temperature and keep cooler longer. Procopio had a special royal license from King Louis XIV to sell a melange of refreshments including spices, iced drinks including “frozen waters”, barley water, anice flower, orange flower, cinnamon flower, frangipan, and his improved version of the Italian “ice cream” of fruit based gelatos like lemon and orange. This gave him exclusive rights to these unique sweet and cool products from his kiosk booth at Foire Saint Germain. He soon added coffee to his refreshments’ list and the kiosk became a cafe. Procopio introduced the Italian “ice cream” gelato at his cafe and is one of the first to sell this new European product directly to the public. Prior to then it was reserved for royalty only. Procopio’s café served it in small porcelain bowls that resembled egg cups. He is sometimes referred to as “The Father of Italian gelato”.

You just can’t beat that smooth, creamy, rich texture and the burst of cold flavor.

Here are the 3 Steps to making amazing gelato right at home.

#1: Use the right ingredients

A true gelataio (ice-cream maker) pays close attention to detail and only uses the highest quality ingredients.

In Italy, gelato is considered a “Real Food.”

A basic recipe uses whole fresh eggs, whole high-quality milk,  and a small amount of sugar.

Depending on the flavor, fresh nuts, fruit juice and puree (from the freshest fruit, of course), or dark chocolate and cacao powder are added.

Very little added sugar is needed in gelato, and the flavors are so vivid and intense that a modest-sized portion will leave you satisfied.

Authentic gelato does not contain fillers, coloring, additives, or emulsifiers.

When making gelato at home, think like a gelataio.

Don’t settle for the 2% milk in your refrigerator or flavor extracts.

Splurge on the high quality, real ingredients.

Trust me, you’ll taste the difference.

#2: The right recipe

Your recipe will vary depending on your flavor preference, but no matter what type you make, start with a good base.

You can see from the pictures that the Lello Musso Pola 5030 is rectangular, while the 4080 Musso Lussino is oblong or oval shaped.

The Lello 5030:

  • Measures 20 inches wide x 14 inches deep x 12.2 inches high.
  • Since the Musso Pola 5030 weighs 68 pounds, you may want to either keep it in a permanent location, or keep it on a stainless steel wheeled cart for easy access and storage.

The Lello 4080:

  • Measures 12 inches wide x 18 inches deep x 11 inches high.
  • It weighs in at about 38 pounds. Still heavy, but very manageable.
  • This one could fit on a pantry shelf.

Capacity – This is Key

Capacity is oh-so-important. It can be the difference in a quick dessert enough to feed everyone or waiting for a second batch before every can (politely) start eating.

The Musso Pola 5030 has a large 2 quart capacity.

The 4080 Musso Lussino is not far behind with a 1.5 quart capacity.

Many gelato/icecream makers have under 1.5 capacity. The Lellos are great in this regard, but the larger 5030 offers a much larger capacity at 2 quarts.

There’s 4 cups to one quart, and many ice-cream labels will specify that a serving is 1/2 cup, but most people eat more than 1/2 cup of ice-cream in a single serving. If we bump up the serving to one cup which is more realistic, the Musso 5030 will provide 8 servings per batch. The more compact 4080 will provide about 6 servings.

The great thing about the larger capacity of the 5030, is that depending on your group size, you can make a single batch and be done with perhaps a little left over!

How Long Till It’s Ready?

The Lello Musso Pola 5030 mixes and freezes ice cream or gelato in about 20 minutes.
